Vegan Spring Rolls

Happy 4th everyone! Today we wanted to make something light that could be pre-made and taken with you to a BBQ or eaten as a yummy snack.

Here is our version of a simple veggie spring roll.

For these rolls we used organic:
  • Shredded Carrots
  • Cucumber Spears
  • Romaine Lettuce
  • Avocado
  • Red Bell Pepper
  • Spinach
  • Micro Greens



The first step is to take your rice paper wraps and soak them in a bowl of warm to hot water for 15-20 seconds, until the wrap becomes soft and flexible.

Next place your ingredients in the bottom center area of the wrap. Your going to tuck in the bottom lip first over the ingredients, then fold in one side, and the other. To finish it up roll upwards like a burrito and the rice paper will stick together.

Your finish product should look like these! You can either eat it plain or we like to dip ours in sweet chili sauce.
